As I embark on my first year of flatting, I've been scouring the internet for quick, foolproof and most importantly, cheap, recipes to feed our friend group. A wide list of differing dietary needs means recipes need to be easily adaptable whilst keeping the vegetarian, ie. me, happy.
This led me to several cook books and food blogs that all feature delicious, nutritious and above all simple, recipes. Not all are vegetarian; however, they all contain fantastic recipes that may help when your cooking skills are feeling slightly lackluster and it's your turn to feed the troops.
The author of A Modern Way to Cook, British chef Anna Jones is a newfound favourite. No light is shone on the fact that meat is absent, yet her recipes are simple and tasty. They will entice even the staunchest of meat eaters - who are rife in a country full of farmers - to succumb to the delight of vegetables, pulses, beans and grains. Her book is divided into chapters according to cooking time, so perfect to accommodate a 15 minute Tuesday night dinner, or a long Saturday lunch feast.

Daughter of Paul, sister of Stella, Mary McCartney started out photographing food before moving into the kitchen and cooking it. Raised as a vegetarian, she shares great recipes on her food blog P for Peckish, as well as having published two cookbooks.

Kelly Gibney
Closer to home and author of food blog Bonnie Delicious, Kelly Gibney is making waves in New Zealand with her healthy, modern approach to cooking. Her website hosts an array of both meat and vegetarian dishes. I can highly recommend her Quinoa Mexcian Bowl, and go the extra mile to make the accompanying avocado salsa - it's worth it.
